‘These spicy goat (or lamb) pastries are full of flavour. I used locally reared meat from SouthPaddocks.co.uk, a small family farm in Dorset – the goats are born and raised in the Winterborne Valley (you can also order their pork on their website too). Ingredients
(makes four pastries)
- 2 tbsp plain flour, seasoned
- 450g lamb or goat, diced into 2-3 cmpieces
- 4 tbsp olive oil
- 1 onion, sliced
- 1 tsp hot paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1 red pepper, 1 cm cubes
- 1 sweet potato, 1 cm cubes
- 2 tbsp tomato puree
- 1 can chopped tomatoes
- 600 ml beef stock
- 2 pkts puff pastry, ready rolled
- 1 egg, beaten
- Salt and pepper
Method
- Toss the meat in the flour to coat it evenly. Heat two tablespoons of olive oil in a pan and fry the meat on all sides until browned, then remove from the pan.
- Add the remaining oil to the same pan and gently cook the onion for around 10 minutes until softened. Stir in the spices and cook for a minute or two until fragrant.
- Add the red peppers, sweet potato and tomato purée to the pan, stirring so the vegetables are coated in the spiced mixture. Pour in the chopped tomatoes with the beef stock and return the meat to the pan. Put a lid on the pan and leave to simmer gently for about one and a half to two hours, or until the meat becomes tender and the sauce thickens. Taste and adjust the seasoning and leave to cool.
- Cut the puff pastry into four square portions. Brush the edges of the pastry with beaten egg. Spoon the filling onto each piece and fold the pastry over to form triangles, enclosing it completely. Using a fork crimp the cut edges to seal.
- Finish by brushing the tops with more egg and bake at Gas 6/200°C for around 30 minutes, until golden brown.
- Serve warm with new potatoes and a fresh salad for a simple, delicious meal.
